So tis the season for “Fish Fridays”. I thought this year i would invite some pals over and hold the first ever Britt Friday Fish Feast. Problem is, i have only made fried fish once and it was for a party of four. This Friday, about 14 or so good pals are coming together for the feast. So i went to my trusty Pinterest page in search of a recipe that is not only easy, but tasty and i came across this one. I do cook a lot so i have made a few seasoning adjustments but i think this recipe could be a winner and wanted to share it with you. This recipe says it serves four.
2 Pounds of cod cut in to 5 inch pieces
2 teaspoon kosher salt
1 teaspoon black powder ( i added more because not being a huge fish fan i want to make sure it is very seasoned)
1 cup flour
1 tablespoon garlic powder
1 tablespoon paprika
1 large egg
12 ounces beer
oil for frying
(I am adding these spices in addition)
1/2 teaspoon cayenne
1/2 teaspoon onion powder
I am also going to add about a 1/2 cup corn starch to the flour mixture for a lighter batter
Now,
Heat oil in large dutch oven or your deep pot you hardly use until it comes up to 365 degrees
dry the fish then season with salt and pepper
mix the flour, corn starch, garlic powder, paprika, cayenne, and onion powder together, add the egg, mix, then stir the beer in slowly….
Dip fish into batter and into the oil it goes till golden brown. Remove to wire rack so it stays crispy and serve!
I think i will also add a Teaspoon each salt and pepper to the wet batter just to ensure the fish is seasoned well.
This Friday i will be putting the recipe to the test please wish me luck! Gonna also fry up fresh cut french fries and thinking a nice slaw will be in order too!
Fish….The other white meat….You have to eat…During Lent anyway….
