Well Labor day weekend is right around the corner, and you may be planning one last camp trip with friends and family. I know every year we gather with good friends for three days of laughter, beverage drinking and of course the food. Lots of food. We even get together a week prior to discuss who is in charge of what on which day. And of course we are not just talking the evening feast, this also includes the most important meal of the day, Breakfast. Now since this year we will all be camping without a campfire, it is much easier to make things in advance to warm on a camp stove or in your camper oven. And when it comes down to the best and easiest camping breakfast, you can’t go wrong with the breakfast burrito. It’s portable and most everyone loves them. But i have recently learned there is one ingredient that really makes the breakfast burrito pop and that is the potato. Over the years i have made the potatoes in different ways. I have cut them up, fried them and added to the burrito. Hashbrowns also a solid choice. But it was my friend Dana who was in charge of the burritos one year that added a potato i have never thought to use. And that is the Tator Tot! It is a game changer! Of course you will want to cook them in the oven like you normally would do and then add to your other ingredients ie: scrambled eggs, cheese, bacon or sausage or both, green chilis a must and of course the over sized flour shells. I can’t tell you enough how tasty the tots are! Give it a try and or course the crowns work well too!
So enjoy your Labor Day Weekend and really enjoy that breakfast burrito with tots! I guess Napolean Dynamite knew what he was doing when he stuffed his parachute pant pocket with all those sweet tots!
